This recipe is so nutritionally packed it will leave you feeling energized and full for a few hours!
You can use any healthy pancake base if you are on the go but the best one around is Namaste brand Gluten free pancake and waffle mix. Minimally processed with whole food ingredients.
Gluten Free Pancake or Waffle Mix
1/4 cup chopped walnuts
2 tablespoons chia seeds
2 tablespoons flax seeds
2 tablespoons hemp seeds
4 tablespoons pumpkin seeds
1/4 cup unsweetened shredded coconut
Cinnamon (to your liking)
***optional: you can add fruit such as a mashed banana or applesauce, as well as vegan chocolate chips or shaved dark chocolate etc.
Prepare mix according to directions ( to make it dairy free use organic soy milk or hemp milk for best results).
Blend all nuts, seeds and shredded coconut in any type of blender or food processor
Add to mix and stir
Add fruit of desired
Add more milk if you want thinner pancakes
Heat skillet with coconut oil and add mix on medium heat. Flip when starts to bubble
Eat as is or serve with pure maple syrup or agave
